Whatever is wrong with your RV roof in October will be worse in March.

A cover or a carport hides a lot. So before it gets put away, the roof deserves ten minutes. Look at the sealant around every vent, the skylight, the antenna and the front and rear seams. You're looking for cracks, gaps, or spots where it has pulled away. Water only needs a hairline, and it has all winter.

If climbing up there isn't your idea of a good time, that's fair. We can inspect it and reseal what needs it before it goes into storage.

Inject or brine? We've been asked a few times since the Heath Riles Cajun Turkey Injection & Brine came in, so here's our take...do both. Serious flavor, and so juicy!

Brine; 1 cup per gallon of water, bird fully under, 12 to 24 hours in the refrigerator. Whether you are using Meat Church Bird Baptism, Heath Riles Cajun Turkey Injection & Brine, or Malcom's Bird Brine, it adds moisture and flavor to the whole turkey/chicken evenly.

Inject; 1/4 cup in 12 to 16 ounces of liquid, and you can do it right before you cook.

One thing to check: read the label on your turkey. If it says it already contains a solution, it's been brined at the plant. Rinse before you put it in your brine to make sure it is done right!

Every spring somebody opens their RV fridge for the first time since fall and wishes they hadn't.

It takes five minutes to avoid. Empty it all the way, including the ketchup you think will be fine. Wipe it down, let the freezer defrost and dry, and prop both doors open for the winter. Most RV fridges have a little latch that holds the door cracked for exactly this reason. A box of baking soda inside doesn't hurt.

And if the fridge spent the summer struggling to stay cold, or it works on electric but not on gas, mention it now. That's a lot easier to track down in the off season than the week before your first trip.

Taco Tuesday: grilled chicken thigh tacos.

Boneless, skinless thighs. Coat them with Meat Church Holy Voodoo and let them sit while the Weber heats up.

Grill them hot, about 5 to 6 minutes a side. Thighs are forgiving, so take them to 175 or a little past. They get more tender up there, not less.

Chop them up, pile them on warm tortillas, and top with onion, cilantro, maybe some tomato, and a squeeze of lime.

Open till 5. (828) 631-4455

Nobody wants to talk about the black tank, so we will.

Before the camper sits for the winter, dump and rinse both holding tanks. Whatever stays in there until spring dries hard on the tank walls and the sensors, and then your gauge reads two-thirds full for the rest of its life.

Two more things. Pour a little RV antifreeze in the toilet bowl so the seal stays wet and doesn't dry out and crack. And pay attention to the dump valves when you pull them. If one is stiff, or it drips after you close it, it's not going to get better sitting.

Valves and seals are something we replace all the time. Call (828) 631-4455, we have service techs at the shop and on the roads weekdays 9 to 5.

Nobody should meet their Thanksgiving turkey recipe for the first time on Thanksgiving.

Run a practice bird this week. A turkey breast or even a whole chicken will tell you what you need to know.

Brine the night before with Meat Church Bird Baptism. Mix 1/4 cup of Heath Riles Cajun Turkey Injection & Brine with 12 to 16 ounces of water or chicken broth. Inject it about every inch across the breast and into the thighs, going in slow so it stays put. Pat the outside dry and hit it with your favorite poultry rub, Meat Church Voodoo, Heath Riles Cajun Creole Garlic Butter, Meat Church Holy Gospel, Meat Church Holy Cow, we have them all.

Smoke it at 300 until the thickest part of the breast reads 155, then let it rest...I double foil wrap with butter for the rest.

Make sure to take notes. More heat? Less? Hotspots? You've got five weeks to dial it in. Call or come in today, we have everything you need to make this Thanksgiving epic!

Company coming for Thanksgiving and not enough beds? That camper in the driveway is a guest room.

It just needs a little attention first. The furnace should light and hold temperature. The LP system should be checked if it has sat all summer. And you'll want to decide about water. If the camper is already winterized, guests can sleep out there with the heat on and use the bathroom in the house.

Thanksgiving is a little over five weeks out. If you want the furnace and propane looked at before the family moves in, now is the time to call.

Sunday cast iron tip, since we're closed and you're probably cooking.

The reason a skillet is slick as glass has less to do with age and more to do with what is done after supper.

While the pan is still warm, wipe it out. Stuck bits come off with a little soap and water. Rinse it off, then put it back on the burner for a minute until it's bone dry. Rub in a few drops of oil, wipe off as much as you can, and put it away.

Two minutes. Do it every time and that skillet will outlive all of us.

Have a good Sunday.

We're closed today. If you're taking the camper up on the Parkway to see the color, one tip before you go.

There are more than two dozen tunnels on the North Carolina side, and the height posted for each one is for the center of the arch. At the edge of the lane the clearance is noticeably lower. An AC unit on the roof finds that out the hard way.

Know your rig's real height, AC and all. The Park Service has a tunnel height chart online. Look it up before you leave cell service, and when you get to a tunnel, check for oncoming traffic and take the middle if it's clear.

Enjoy the leaves. See you Monday.

Game day chili dogs. Somebody at your house is expecting them.

Hot dog chili is its own thing. No beans, no chunks of tomato, and a little looser than what you'd eat from a bowl.

Brown a pound of ground beef and break it up as fine as you can get it. Add 2 tablespoons of Heath Riles Chili Seasoning, a small can of tomato sauce and about half a cup of water. Simmer 20 minutes.

Dogs on the Weber until they blister. Mustard and onions on top, slaw if you were raised right.

We close at noon today, so swing by before kickoff. (828) 631-4455
