Today’s our favorite day...... the one, the only !!! This week, we’re keepin it simple yet still VERY important with a classic knife safety tip!! — ALWAYS hold your knife by the handle with the blade facing down when carrying your knife to your chosen choppin destination (and, of course, anywhere else you may be taking it). This is important for the safety of yourself and everyone around you.

Happy !!! Today we’re talking about a necessary accessory to almost any knife- a steel! Here you’ll see a video of how to use a steel on a knife (watch kpov work his magic!). The photos following are showing the process of getting to the proper angle starting at the 90, 45, and then 22 degree angles you should find before going through these movements! Read our tips and instructions below regarding all things steels, then let us know if you have any questions!

HOW TO USE A STEEL:
1st- Find the Proper Position
Hold your knife on the steel at a 90 degree angle, then move it down a quarter to a 45 degree angle, then finally move it down half that amount to around a 22 degree angle
2nd- The Movement
From the back of the top of the steel with the heel of the knife, draw the knife forward towards the front of the steel moving the knife towards the tip
3rd- The Movement pt. 2
Repeat step two on the bottom of the steal. Continue repeating steps 2 & 3 until you’ve made about 10 strokes total

ANSWER TO OUR POLL:
You should be using a steel every time or every other time you use your knife!!!

REMEMBER a steel keeps a sharp knife sharp, but will not sharpen a dull knife!!!!

Our Story

Knife sharpening service by the Povinelli family since 1890.

Arizona Cutlery and Sharpening Service, Inc. was started in the spring of 1975. After struggling for 2 1/2 years, the founder sold the still unprofitable business in the fall of 1977 to the Povinelli brothers of Buffalo, NY who were interested in expanding their family business.

The original family business was started in the 1890's in Buffalo, NY by John Povinelli and his brother Dominic who came from Carisolo - Trento - Italy. They sharpened knives by a push cart mounted grindstone and in the early 1900's used a horse and wagon.

In the 1920's the 6 sons of John Povinelli joined their father and expanded the business. Doing their sharpening in trucks, they covered the city of Buffalo and its suburbs
