If you have never made mud hen bars before, you are in for a real treat. At deesviral, this old-fashioned chewy bar with a crispy meringue top is the kind of homemade dessert that gets passed down for a reason.
Ingredients
1/4 cup butter, softened
1/4 cup shortening
1 cup granulated sugar
3 eggs, separated
1 1/2 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
1 1/4 cups miniature marshmallows
3/4 cup chocolate chips
1 cup chopped walnuts
1 cup packed brown sugar
Directions
Preheat your oven to 350 F and grease a 9x13 baking dish. Beat the butter, shortening, and granulated sugar together until light and fluffy. Add the egg yolks and mix well. Stir in the flour, baking powder, and salt until a soft dough forms. Press the dough evenly into the bottom of the prepared pan. Scatter the marshmallows, chocolate chips, and walnuts evenly over the top. In a separate clean bowl, beat the egg whites until stiff peaks form, then gradually beat in the brown sugar until the meringue is glossy and thick. Spread the meringue evenly over the top of everything in the pan. Bake for 30 to 35 minutes until the meringue is golden brown and set. Let cool completely before cutting into bars.
