Porter’s Processing is woven into the history of alligator hunting in Anahuac, and into the story behind why this community is known as the Alligator Capital of Texas.
The business began with Mark Porter, an avid hunter and fisherman who started hunting alligators with his dad when Texas reopened alligator hunting in the mid-1980s. At the time, Texas hunters had very few options for selling or processing their gators and often had to take them to buyers in Louisiana. Mark saw an opportunity to build something here at home.
What started as a one-man operation hunting, buying, skinning, and processing alligators grew into Porter’s Processing, now the largest alligator processing facility in Southeast Texas. Over the years, Porter’s became known for “All Things Alligator,” from processing and guided hunts to authentic handmade products.
In September 2020, Anahuac’s own Casey and Lindsay Hedges purchased Porter’s and took on the responsibility of carrying that legacy forward. Today, they continue the alligator work that has made Porter’s such an important part of this community and its heritage.
This partnership hits especially close to home for Marsh Master Roundup. Casey serves as President of Marsh Master Roundup, and Lindsay serves as Treasurer. They’re putting in the work behind this event while also supporting it through Porter’s as a Marsh Captain Founding Sponsor.

*** Marsh Master Roundup is a 501(c)(3) nonprofit organization. Fifty percent of all proceeds are reinvested into building an even bigger and better festival for next year. The remaining fifty percent is equally divided between youth development, scholarships, and community revitalization throughout our community.
