酸菜魚：
使用(烏鱧魚)，(烏鱧魚)肉嫩豐厚，Ｑ彈細緻，魚刺少，完全新鮮不帶土味，魚皮帶點膠質的Ｑ勁口感；秘制老罈酸菜，菊花退火降熱；湯頭使用龍骨，熬煮8小時的龍骨湯，香溢濃郁！最後再品嚐吸附滿湯汁的酸辣粉！

使用完全無污的曾文水庫/松魚，因為是水庫魚，所以肉質更細緻鮮甜！野生放養4年以上的松魚，每一隻魚重達3公斤以上，膠質最多！食用前在魚頭鍋淋上高酒精的白酒，點火後讓魚肉、醬汁、高湯完全融合，提味昇華！
