🏴 Scottish Delicacies – Episode 1: The Great Haggis 🏴

Every week we’ll be diving into the food and drink that make Scotland… well, Scotland. And what better place to start than with the undisputed king of the table?
Ladies and gentlemen… HAGGIS.
Yes, the famous “great chieftain o’ the puddin’-race”.
The dish that makes visitors go “Wait… what’s in it?” and locals go “Pass the whisky sauce, please.”
For the uninitiated:
Haggis is a savoury pudding made from sheep’s heart, liver and lungs mixed with oatmeal, onions, suet and a good kick of spice. Traditionally it was cooked in the animal’s stomach (nature’s original slow-cooker), though these days it’s usually a neat artificial casing.
It’s normally served with neeps and tatties (mashed turnip and potato) and a dram of whisky or a rich whisky cream sauce. And every 25th January on Burns Night it gets its own poem, a ceremonial stabbing, and a standing ovation.
Pro tip from the park:
After a blustery walk along the Solway coast or a lazy afternoon watching the tide come in at Kippford, nothing hits the spot quite like a proper plate of haggis, neeps and tatties. Comfort food that actually means something.
