Making great pizza is not just about using the best ingredients, proofing the dough to perfection or mastering the art of hand stretching. There’s many factors that come into play, and using the correct fuel for your wood fired oven is one that’s often overlooked. Over the years, we’ve tried them all (nearly), and each has its merits. One of our favorites has to be beech. There’s something special about cooking with kiln-dried beech 🔥🍕 It catches quickly, burns bright, and fills our oven with a consistent, steady, heat that’s perfect for crisp, blistered pizza bases. With its clean, long-lasting burn and gentle, natural aroma, it lets the ingredients shine while adding that authentic wood-fired character. Simple, reliable, and full of atmosphere—just how great pizza should be made. 🔥
