Try this simple, easy & healthy recipe with any of our whole fish such as - Red Snapper, Branzino, Dorade, Black Seabass, Porgies, Trout and Saint Peter’s !

Ingredients:
• 1 whole red snapper cleaned and scaled (let us do the cleaning for you !) (about 1.5–2 lbs)
• 2–3 cloves garlic, minced
• 1 lemon (half sliced, half juiced)
• Salt and freshly ground black pepper to taste
• 2–3 tablespoons olive oil
• Fresh herbs: parsley, thyme, or rosemary (whole sprigs and some chopped)
• Optional: 2–3 shallow diagonal scores on each side of the fish

Instructions:
1. Preheat oven to 400°F (200°C). Line a baking tray with parchment paper or lightly oil it.
2. Prepare the fish:
• Pat the fish dry with paper towels.
• If scoring: make 2–3 diagonal cuts on each side of the fish, about 1/2 inch deep.
• Season the fish generously inside and out with salt, pepper, and minced garlic.
• Squeeze lemon juice over the fish and rub it in.
3. Stuff the cavity with:
• A few lemon slices
• Whole herb sprigs (thyme, parsley, rosemary)
4. Top the fish:
• Drizzle olive oil all over the fish
• Lay remaining lemon slices on top or tuck into the scores
• Sprinkle chopped herbs on top for extra aroma
5. Bake for 20–25 minutes, depending on the size of the fish, until the flesh flakes easily with a fork and is opaque.
6. Serve with extra lemon wedges and drizzle with pan juices or a touch of olive oil.

Tips:
• For extra crisp skin, broil the last 2–3 minutes.
• Pairs well with roasted potatoes, rice, or a fresh green salad.

Looking to grill up some fish this Summer ? We have you covered !

Swordfish is excellent on the BBQ grill, it’s a firm, meaty fish that holds together well and doesn’t flake apart like more delicate fillets. It has a rich, mildly sweet flavor and a texture similar to steak, making it perfect for grilling. The grill gives it a nice char and smoky depth that enhances its natural taste.

Quick Grilled Swordfish Marinade & Topping Idea:

Marinade Idea
• 2 tbsp olive oil
• Juice of 1 lemon
• 1 tsp garlic (minced)
• 1 tsp fresh oregano or thyme
• Salt and black pepper to taste

Grill it:
Cook 3–4 minutes per side over medium-high heat, depending on thickness.

Optional Topping After Grilling:
• A drizzle of lemon-garlic butter or
• A spoonful of fresh tomato salsa with capers, basil, and olive oil for a Mediterranean twist

We will resume our regular Farmers Market schedule in October after we have stocked our freezers full of fish once again.
