Quick Chicken and Avocado Salad
This salad is a perfect option for a quick and healthy lunch. It is rich in protein, healthy fats and fiber, which helps you stay full and energetic for longer.
Ingredients:
150 g boiled or baked chicken breast
1 ripe avocado
2-3 handfuls of lettuce (leaves, arugula or spinach)
5-6 cherry tomatoes
1/4 red onion
1 tbsp olive oil
Juice of 1/2 lemon
Salt and pepper to taste
Preparation:
Cut the chicken, avocado and onion into small cubes. Cut the cherry tomatoes in half.
Combine the lettuce, chicken, avocado, tomatoes and onion in a bowl.
For the dressing, mix the olive oil, lemon juice, salt and pepper.
Drizzle the dressing over the salad and serve immediately.
