Can you freeze your coffee?

It’s one of the questions I get asked more than almost any other.

The short answer is yes… but only if you do it the right way.

Throwing an opened 1kg bag in and out of the freezer is one of the quickest ways to ruin great coffee. Every time it comes out, moisture can condense on the beans, and that’s not doing your coffee any favours.

A much better approach is to split your coffee into smaller portions before freezing. Then, when you need some, take out just one bag, let it come to room temperature, use it, and leave the rest frozen until you’re ready.

A few small changes like this can make a surprisingly big difference to the coffee in your cup.

One of the biggest compliments you can give someone is to trust them with something you’ve worked hard to build.

When Jazz and I headed away for a week, we genuinely thought we might have to close the shop. Instead, Emily stepped up and took complete ownership of it.

There were some busy days along the way, but she handled them with calmness, professionalism and grace. Customers were looked after, coffee was flowing, and everything kept running smoothly.

Watching people grow is one of the most rewarding parts of running a business. Over the past few years, we’ve had the privilege of seeing Emily develop into an exceptional coffee professional and an incredibly important part of our team.

We’re proud of what she’s achieved and grateful for everything she brings to Walcha Coffee.

Awards are a funny thing.

People see the medals, but they don’t see the hundreds of batches roasted before sunrise, the late-night cuppings, the coffees that didn’t quite hit the mark, or the constant tweaking and learning that happens behind the scenes.

There isn’t really a shortcut.

You show up. Roast coffee. Taste coffee. Learn something. Do it again tomorrow.

These medals are something we’re proud of, but they’re really just a snapshot of a much longer journey. The real reward is knowing we’re making better coffee today than we were yesterday.

And tomorrow we’ll be back at it again.

Back home after an incredible week at Golden Bean.

We were fortunate enough to come away with 7 medals from a field of more than 750 coffees, but one of the things I love most about events like this isn’t the trophies—it’s the people and the coffee.

Along the way, Brian from White Horse Coffee Roasters generously gave me some Candy Mountain coffee to bring home, and I also picked up some coffee from O’Gabee & Co in Brisbane. Both have been absolutely outstanding. It’s always inspiring to taste what other talented roasters are producing and be reminded just how much great coffee is out there.

It’s got me thinking that we should organise a public cupping or coffee tasting session here in Walcha. The Winter Market weekend could be the perfect opportunity to get a few people together, taste some exceptional coffees and talk all things coffee.

What a night.

Golden Bean 2026 wrapped up in true style with a Viking-themed awards dinner. There were horns, costumes, plenty of laughs, and more than a little frivolity, but behind all the fun was one of the toughest coffee competitions we’ve ever seen.

With well over 700 entries from some of the best roasters in Australia and beyond, earning a place on the podium was no easy feat.

We’re incredibly proud to have come away with 7 medals:

One of the highlights for me was seeing Jazz continue to grow as a roaster and stand alongside some of the industry’s best. Coffee competitions are humbling. They remind you just how much talent exists in this industry and how much there is still to learn.

To come home with seven medals from a field this strong is something we’re very grateful for.

Congratulations to all the competitors, judges, organisers, and volunteers who made this year’s event possible. It was an outstanding week of coffee, friendship, learning, and healthy competition.

Now it’s time to head home to Walcha and get back to roasting.
