INGREDIENTS:
For the Strawberry Caramel
1 ยฝ cup of granulated sugar
1 container (16oz) of fresh strawberry
1 container (16oz) of fresh strawberry to decorate (Optional)
For the Flan
4 ounces Cream Cheese, softened
1 14 oz can of sweetened condensed milk
1 12 oz can of evaporated milk
4 large eggs at room temperature
2 teaspoons of vanilla extract
HOW TO MAKE IT:
Remove the stem from the strawberries, and using a food processor, blend all until fully pureed. Add the pureed strawberries to a large saucepan over medium heat and cook for 5 minutes after boiling. Slowly add the sugar and keep stirring until it is fully dissolved.
Keep the mixture on medium heat until the caramel turns into a rich dark red, approximately 20-30 minutes. Be careful not to burn it because the color develops quickly. Once you arrive at caramel consistency, remove from heat and use it to coat the bottom, sidewalls, and center of a 12-cup bundt cake pan thoroughly.
In a bowl, combine the cream cheese and slowly add the sweet condensed milk little by little to prevent lumps. Then, add the evaporated milk, eggs, and vanilla, mixing until smooth. Pour the mixture into the pan coated with caramel sauce.
You can cook this in the oven or a stovetop water bath for 60 minutes. If using a stovetop, check for doneness after 50 minutes. It is recommended that you refrigerate the flan overnight or for at least 2 hours before flipping it to serve. When ready, use a knife to loosen the sides, flip on a serving dish and adorn it with fresh strawberries on top!
